Plate Cake

Ingredients
- 5 eggs
- 250 g powdered sugar
- 2 packets vanilla sugar
- 1 pinch salt
- 250 ml egg liqueur
- 250 ml vegetable oil
- 100 g Ground Almonds
- 150 g cornstarch
- 100 g flour
- 1 packet baking powder
- butter (for greasing the pan)
- 200 g powdered sugar
- 3 tbsp Lemon juice
- 2 tbsp sugar pearls
Instructions

Beat eggs with powdered sugar, vanilla sugar and salt in a mixing bowl until thick and foamy. Then fold in the egg liqueur and gradually whisk in the oil, continuing to beat for 2 minutes.

Mix flour with cornstarch, almonds and baking powder; add this dry mixture over the egg batter and gently fold it in with a whisk.

Pour the batter into the greased pan and bake in a preheated oven at 180°C (conventional heat) on the middle rack for about 60 minutes. Test with a skewer. Remove the cake and let it cool in the pan for a few minutes, then transfer to a wire rack to finish cooling.

Whisk powdered sugar with lemon juice, adding 1 tbsp water if needed. Slowly pour this glaze over the top and sides of the plate cake from above and around. Sprinkle with sugar pearls, allow to set, then serve.
