Simple Strawberry Cake

Ingredients
- 90 g butter
- 6 Eggs
- 175 g sugar
- 150 g flour
- 750 g strawberries
- 200 g mascarpone
- 1 organic lime (juice and zest)
- 1 tbsp powdered sugar

Melt the butter in a small pot over gentle heat. Separate the eggs. Add the sugar to the yolks and whisk in a double boiler until thick and creamy. Lift the cream from the double boiler. Sift the flour over the egg‑cream mixture. Do not stir!

Add the lukewarm butter. Beat the whites into stiff peaks. Gently fold one third of the meringue into the egg‑cream. Spoon the remaining meringue onto the loosened batter and fold in carefully. Butter a springform pan and pour the sponge batter in. Bake in an oven (convection 160°C) for 35 minutes until golden yellow. Transfer the cake to a cooling rack and let it cool for about 1 hour.

Mix mascarpone, powdered sugar, lime juice and zest and spread over the sponge base. Wash, trim and pat dry the strawberries (leave whole). Top the cake with strawberries and lightly dust with powdered sugar. Cut into pieces before serving. Serve the simple strawberry cake garnished with fresh mint.
