Ingredients

  • 100 g shallots
  • 2 stalks celery
  • 2 red bell peppers
  • 250 g Risotto rice
  • 8 tbsp olive oil
  • vegetable broth
  • Salt
  • freshly ground pepper
  • 1600 g pre-cooked plaice (4 pieces)
  • juice of half a lemon
  • a little flour (for coating)
  • 8 tbsp oil
  • 4 tbsp butter
  • several dill sprigs

Instructions

    Peel and roughly chop the shallots. Clean, wash, and cut the celery into pieces. Wash and finely slice the bell peppers. Rinse the risotto rice and drain well.

    Heat 4 tbsp oil in a pan, sauté the rice until translucent. Add the vegetables and deglaze with broth. Bring to a boil. Season with salt and pepper. Cover and cook over medium heat for about 20 minutes.

    Rinse the plaice and pat dry. Drizzle with lemon juice. Season with salt and pepper. Coat in flour, tapping off excess.
