Marinated Ribs

Ingredients
- 2 cloves garlic
- 1 piece fresh ginger (ca. 2 cm)
- 2 tbsp Lime juice
- 80 ml oyster sauce
- 60 ml soy sauce
- 1 tsp dried chili flakes
- 1 tsp ground cumin
- 0.5 tsp ground coriander
- 3 tbsp brown sugar
- 2 tbsp olive oil
- 2 tbsp sesame oil
- coarse Sea salt
- black pepper (freshly ground)
- 1.5 kg pork ribs
- 3 spring onions
- 1 red chili pepper
- 2 handfuls cilantro leaves
- 1 Lime

Peel and finely chop the garlic and ginger.

Combine all ingredients for the marinate, add 3 tbsp water, a pinch of salt, and black pepper to taste. Rinse the ribs, pat dry, place them in the marinate in a bowl, and refrigerate for at least 1 hour.

Preheat the oven to 200°C (Oven + fan). Place the meat with its marinate in a covered baking dish. Cook closed for about 15 minutes. Reduce temperature to 180°C and bake for another 45 minutes. In the last 10 minutes, remove the lid and reduce the sauce slightly.

Wash and trim the spring onions, cut into rings. Wash and slice the chili into thin rings. Rinse cilantro, shake dry, pluck leaves, and roughly chop. Arrange the ribs with some sauce on a plate, sprinkle with spring onion, chili, and cilantro. Slice lime into wedges and serve alongside. Rice pairs well.
