Grilled Ribs with Melon-Cucumber Carpaccio

Crispy grilled pork ribs served alongside a refreshing melon-cucumber carpaccio. Try this and other recipes from Spoonsparrow!

Ingredients

  • 2 kg pork rib
  • 2 tbsp Tomato paste
  • 1 tbsp five-spice mix
  • 1 tsp grated ginger
  • 50 ml Soy sauce
  • 1 cucumber
  • 400 g watermelon
  • 6 Radishes
  • 1 Lime (juice)
  • 1 tbsp honey
  • 3 tbsp olive oil
  • 2 tbsp chopped pistachios
  • Mint leaves
  • 1 ball mozzarella

    Wash and pat the ribs dry. Parboil in water for about 15 minutes. Meanwhile, mix tomato paste with five-spice powder, ginger, and soy sauce. Pat the pork ribs dry again, brush with the marinade, and grill on a hot grill, turning occasionally, for 15-20 minutes until cooked through.

    Wash, peel, and slice the cucumber and radishes into very thin long strips or shave them. Arrange on a plate, whisk lime juice with honey and olive oil, then drizzle over the vegetables. Place the grilled ribs on top of the carpaccio, sprinkle with pistachios and mint leaves. Drain the mozzarella well, tear it into pieces, and scatter over the carpaccio as well. Serve immediately.
