Plaice with Carrot-Onion Vegetables in Foil

- 4 plaice fillets (ready to cook)
- 4 Carrots
- 4 onions
- 70 g butter
- 1 tsp black peppercorns
- 125 ml white wine
- Salt
- 2 lemons (unwashed)
- smooth parsley

Rinse the plaice and pat dry. Place each fillet on a suitably sized piece of aluminum foil for wrapping.

Peel the carrots and cut into thin strips. Peel the onions and slice into rings. Heat half the butter in a non-stick pan. Sauté the carrots and onions for 3 minutes. Add peppercorns and deglaze with white wine. Reduce the wine. Season with salt and spread over the plaice.

Rinse lemons and slice into rounds. Rinse parsley, shake dry, and pluck leaves from stems. Distribute lemon slices and parsley over the plaice. Sprinkle remaining butter in small flakes on top. Seal the foil tightly around the fillets and place on a baking tray. Bake in a preheated oven at 200°C (gas: level 3-4, convection: 180°C) for 25-30 minutes.
