Asian Starter with Tofu, Sprouts and Kroepoek

Ingredients
- 400 g Tofu
- 2 tbsp Soy sauce
- 2 tbsp fish sauce
- 100 g rice flour (or 50 g wheat flour and 50 g wheat starch)
- 1 Egg white
- a pinch salt
- 1 tsp curry powder
- rice flour (for coating)
- vegetable oil (for frying)
- 8 salad leaves (e.g., radicchio and lollo bionda)
- 4 kroepoek
- 0.5 handful sprouts
Instructions

Cut the tofu into 4 roughly equal slices. Drizzle with soy sauce and fish sauce and let marinate for about 20 minutes.

Sift the rice flour into a bowl. Add the egg white, salt, and curry powder and whisk quickly. Pour in about 150 ml cold water all at once and mix until smooth.

Coat each tofu slice in the flour, then dip in the batter. Place in a hot pan with plenty of oil and fry for about 5 minutes on each side until golden brown, turning occasionally and pouring hot oil over as needed.

Wash, trim, dry, and tear the salad leaves into small pieces. Place each leaf on a kroepoek, top with tofu, and garnish with sprouted beans before serving.

Serve with chili sauce to taste if desired.
