Fresh Tomato Soup

Ingredients

  • 1 kg tomatoes
  • 1 onion
  • 1 tbsp Olive Oil
  • 1 Garlic clove
  • 2 tsp fresh oregano leaves
  • 1 tbsp Tomato Paste
  • 1 glass (400 ml) vegetable stock
  • Salt
  • ground pepper
  • 150 g cocktail tomatoes
  • 150 g crème fraîche
  • 1 tbsp balsamic cream

Instructions

    Score the tomatoes crosswise, blanch in boiling water for 1-2 minutes, drain and shock with cold water. Peel the tomatoes and roughly chop them.

    Peel and dice the onion. Heat olive oil in a pot. Sauté the onion until translucent. Peel and press the garlic into the pot. Add oregano and tomato paste, stir well. Pour in the tomatoes and vegetable stock. Cover and simmer for 15 minutes. Season with salt and pepper.

    Rinse the cocktail tomatoes and halve or quarter them. Mix crème fraîche with balsamic cream. Add the cocktail tomatoes to the soup. Serve the soup garnished with freshly ground pepper and a dollop of balsamic crème fraîche.
