Ideal as a crisp-fresh starter: Colorful mixed salad with delicious dressing always tastes great.
Ingredients
- 0.25 iceberg lettuce
- 1 radicchio
- 0.25 Chinese cabbage
- 50 g green olives
- 50 g black olives
- 2 onions
- 1 Carrot
- 5 radishes
- 2 white beets
- 100 g mushrooms
- 0.5 sour cucumber
- 1 bunch mixed herbs
- juice of one lemon
- 1 tbsp mustard
- 100 ml olive oil
- salt (pepper)
Instructions

Wash the salad, cut iceberg, Chinese cabbage and radicchio into fine strips. Pit and halve olives. Peel onion and carrot. Slice onion into rings and carrot into rounds. Grate radishes and beets finely. Clean mushrooms and slice thinly. Halve cucumber, pit it and slice. Mix all ingredients together. For the vinaigrette wash herbs, pluck leaves from stems and finely chop them. Whisk lemon juice with mustard and fold in oil.

Fold in herbs and season with salt. Serve the sauce over the salad.
