Pizza with Sausage, Mozzarella and Broccoli

Ingredients
- 500 g flour
- 1 cube yeast (42 g)
- 3 tbsp goose fat
- 2 tsp salt
- 1 tsp sugar
- flour (for the work surface)
- vegetable oil (for the trays)
- 5 tomatoes
- 2 tbsp Tomato paste
- Salt
- pepper (ground)
- 1 broccoli head
- 200 g Lyoner sausage (sliced)
- 3 balls mozzarella (125 g each)
- 0.5 tsp Chili flakes

Knead all dough ingredients with 300 ml lukewarm water into a smooth dough and let rise in a warm place for about 60 minutes.

Wash the tomatoes, remove stems and chop small. Blend with tomato paste in a blender, season with salt and pepper.

Blanch broccoli florets in boiling salted water for about 3 minutes. Preheat oven to 240°C (top and bottom heat). Slice sausage and mozzarella thinly.

Divide dough into 6 portions and roll each on floured surface into a circle. Place on oiled trays, spread tomato puree over the base. Top with drained broccoli, sliced sausage and mozzarella. Sprinkle chili flakes and bake in preheated oven for about 20 minutes, swapping tray positions after 10 minutes.
