Spicy Meat Muffins

Ingredients

  • Vegetable oil (for the molds)
  • 5 slices of toast bread
  • 200 ml milk
  • 2 cloves garlic
  • 2 onions
  • 2 Spring Onions
  • 2 red chili peppers
  • 400 g ground meat (mixed)
  • 2 Eggs
  • 1 tsp salt
  • pepper (ground)
  • Nutmeg (freshly grated)
  • 200 g unsalted peanuts
  • 2 tbsp powdered sugar
  • 40 g sweet chili sauce

Instructions

    Preheat the oven to 180°C fan. Line a muffin tin with paper cups as desired and lightly oil them.

    Cut the toast into cubes and soak in milk. Peel and finely chop the garlic and onions. Wash the spring onions, trim, slice the white parts into thin rings, and cut the green parts into long slivers for garnish. Slice the chilies (gloves recommended), deseed, and dice finely; set aside about half.

    In a bowl combine the ground meat with the drained toast, garlic, onions, spring onion rings, and chili. Add the eggs, knead into a smooth mixture, season with salt, pepper, and nutmeg. Fill the muffin tin cavities.

    Bake in the oven for about 20 minutes.

    Coarsely chop the peanuts and roast them in a hot pan. Sprinkle with powdered sugar and lightly caramelize. Stir in the sweet chili sauce. After about 10 minutes spread over the meat muffins and finish baking.

    Serve warm, garnished with spring onion greens.
