Ingredients

  • 0.5 cube Yeast
  • 1 tsp sugar
  • 400 g flour (Type 405)
  • 5 tbsp olive oil
  • Salt
  • flour (for work surface)
  • olive oil (for baking tray)
  • 150 g peas (frozen)
  • 200 g green asparagus
  • 1 tbsp white balsamic vinegar
  • 2 handfuls spinach
  • 1 tsp butter
  • 4 Spring Onions
  • 80 g grated Emmental cheese
  • pepper (ground)
  • 1 egg

Instructions

    For the dough, crumble the yeast into a bowl, add sugar and 210 ml lukewarm water, stir until smooth. Add flour, 2 tbsp olive oil and 1 tsp salt, knead into a supple dough. Cover and let rise in a warm place for about 1 hour.

    For the topping, thaw the peas. Wash the asparagus, trim 1 cm from the bottom, slice thinly lengthwise with a mandoline. Toss with remaining olive oil (3 tbsp) and balsamic vinegar. Clean the spinach; heat butter in a pot, add spinach until it wilts while stirring. Squeeze out excess liquid and drain. Trim spring onions, wash and cut into small rings.

    Preheat oven to 200°C with upper and lower heating.

    Roll dough on floured surface into a circle, place on oiled baking tray. Sprinkle with cheese, spring onions and peas; spread spinach over it. Season with salt and pepper. Bake in preheated oven for about 15 minutes. Place the fried egg in the center of the pizza and bake for another 10 minutes until finished.
