Pita Pizza with Cucumber Salad
Pita pizza with cucumber salad showcases fast food in its healthiest form: rich in vitamins and minerals without too much fat.
Ingredients
- 320 g tomatoes (4 tomatoes)
- 200 g yellow bell peppers (1 yellow pepper)
- 1 bunch Basil
- 40 g parmesan cheese (1 piece)
- 100 g tomato paste (tube)
- 500 g flatbread (or pita bread)
- 300 g turkey ham
- 300 g gouda cheese sliced (30% fat)
- oregano to taste
- 1500 g cucumber salad (3 cucumbers)
- 0.5 Organic lemon
- 40 g Rapeseed oil (4 tbsp)
- Salt
- Pepper
- 1 pinch sugar
- 1 bunch chives

Wash the tomatoes, cut off the stem ends in a wedge shape and slice them. Halve the bell pepper, carefully remove seeds, wash and cut into 1 cm thick rings.

Wash basil, shake dry, pluck leaves and finely chop. Grate parmesan. Mix both with tomato paste in a small bowl.

Cut the bread and spread each half with the tomato-cheese mix. Top with ham, tomatoes, pepper rings and finally cheese. Sprinkle oregano to taste.

Line two baking trays with parchment paper and place one bread half on each. Bake in a preheated oven at 200°C (convection: 180°C, gas: level 3) for about 8 minutes until golden.

Meanwhile wash cucumbers thoroughly, peel and slice thinly with a vegetable peeler. Place in a salad bowl.

Rinse half a lemon hot, dry and grate some zest finely. Then squeeze the lemon half and mix juice with grated zest in a small bowl.

Add oil and whisk everything into a sauce with a fork. Season with salt, pepper and a pinch of sugar.

Wash chives, shake dry and cut into rings. Add to sauce and fold into cucumbers. Cut each pita pizza into 10 pieces (2 per child) and serve with cucumber salad.
