Peach Dessert

Ingredients
- 2 ripe peaches
- 1 tsp lemon juice
- Cinnamon
- 80 g delicate oatmeal flakes
- 40 g almond flour
- 3 tbsp maple syrup
- 30 g Butter
- 1 tbsp raisins (15 g)
- 200 g low‑fat quark
- 1 tsp vanilla powder

Wash the peaches, pat dry, halve and pit them. Set one half aside; cut the rest into small cubes. Add lemon juice and 1 tsp cinnamon, let steep for 10 minutes.

For the crumble mix oatmeal flakes, almond flour, 2 tbsp maple syrup, butter, a pinch of cinnamon, and raisins in a bowl and knead until crumbly. Spread the mixture on parchment paper on a baking sheet and bake in a preheated oven at 180 °C (fan 160 °C) for about 20–25 minutes until golden brown. Remove and cool.

Meanwhile whisk the low‑fat quark with vanilla powder and remaining maple syrup until smooth.

Slice the remaining peach half into very fine slivers. Layer peach compote, vanilla quark, and crumble alternately in glasses. Finish with a layer of vanilla quark and sprinkle cinnamon on top. Garnish the Peach Dessert with fresh peach slivers and serve.
