Belgian Oat Chocolate Waffles

Ingredients

  • 1 Vanilla bean
  • 60 g raw cane sugar
  • 300 g Greek yogurt
  • 50 g fine oat flour
  • 150 g Spelt flour Type 1050
  • 1 pinch salt
  • 0.5 cube Yeast
  • 300 ml lukewarm milk (3.5% fat)
  • 50 g liquid butter
  • 2 Eggs
  • 100 g dark chocolate (at least 70% cocoa)
  • 50 g ground almonds
  • 20 g high‑oil‑free cocoa powder (3 tbsp)
  • 3 apricots
  • 3 yellow plums

Instructions

    Split the vanilla bean lengthwise and scrape out the seeds. Mix 2 tsp of vanilla seeds with 1 tbsp sugar and yogurt; refrigerate.

    Grind oat flakes into fine flour using a food processor. In a bowl combine oat flour, remaining vanilla seeds, sugar, spelt flour, and a pinch salt. Crumble yeast and add milk, butter, and eggs to the mixture.

    Beat everything with an electric mixer until smooth. Cover the dough with a clean kitchen towel and let rise in a warm place for about 1 hour. Meanwhile grate chocolate finely and set aside 2 tbsp for garnish.

    Add remaining chocolate, almonds, and cocoa powder to the waffle batter; fold gently. Preheat the waffle iron, oil if needed. Pour about 4 tbsp of batter into the iron, close, and cook waffles until golden. Use up the rest of the dough similarly.

    While the waffles bake, wash, pit, and slice apricots and plums. Plate the Belgian oat chocolate waffles and arrange with yogurt, sliced fruit, and grated chocolate on top.
