Pink Smoothie Bowl with Watermelon for the Thermomix®

The Pink Smoothie Bowl with Watermelon for the Thermomix is perfect as a quick and healthy breakfast on hot summer days.

Ingredients

  • 2 kg watermelon (0.5 whole watermelons)
  • 3 tbsp Lime juice
  • 3 tbsp agave syrup
  • 120 g rolled oats (8 tbsp)
  • 200 ml coconut water
  • 20 g shredded coconut (4 tsp)
  • 2 stalks lemon balm

Instructions

    Peel the melon and cut into large pieces. Cut 1/4 of the flesh into 1½ cm cubes and set aside.

    Place the large melon chunks, lime juice, agave syrup, 4 tbsp oats, and coconut water in the mixing bowl and blend for 2 minutes on speed 10. Divide among four bowls. Sprinkle remaining oats and shredded coconut on top.

    Wash lemon balm, shake off excess moisture, and pluck the leaves. Garnish the smoothie bowl with the leaves and the remaining melon cubes.
