Pink Smoothie Bowl with Watermelon

The pink smoothie bowl with watermelon is great as a refreshing fit-maker for hot days.

Ingredients

  • 2 kg watermelon (0.5 whole watermelons)
  • 3 tbsp Lime juice
  • 2 tbsp agave syrup
  • 180 g delicate rolled oats
  • 200 ml coconut water
  • 20 g shredded coconut
  • 2 sprigs lemon balm

Instructions

    Peel one half of the watermelon and roughly cube ¾ of its flesh. Cut the remaining flesh into 1.5 cm cubes and set aside.

    Blend the large watermelon cubes with lime juice, agave syrup, 4 tbsp oats, and coconut water until smooth. Divide into four bowls. Sprinkle the remaining oats and shredded coconut on top.

    Wash the lemon balm, shake off excess moisture, pluck the leaves, and garnish each bowl with them along with the leftover watermelon cubes. Serve immediately.
