Pink Berry-Coconut Drink with Silken Tofu

Ingredients

  • 150 g Strawberries
  • 150 g Bananas (1 banana)
  • 125 g Beetroot (pre-cooked, vacuum-packed)
  • 50 g rolled oats
  • 200 g silken tofu
  • 1 tsp flaxseed meal
  • 1 tbsp Pumpkin seeds
  • 2 tbsp coconut flakes
  • 300 ml soy drink (soy milk)

Instructions

    Clean the strawberries, removing the core and washing them. Peel and chop the banana into small pieces. Quarter the beetroot.

    Combine everything with rolled oats, silken tofu, flaxseed, pumpkin seeds, 1 ½ tbsp coconut flakes and soy drink in a blender or puree finely with an immersion blender. Fill 2 tall glasses with the pink berry-coconut drink with silken tofu. Sprinkle with the remaining coconut flakes and enjoy.
