Cheese Muffins

Ingredients
- 150 g wheat flour type 405
- 150 g corn flour
- 0.5 TL salt
- 0.5 TL baking powder
- 0.5 TL paprika powder (hot)
- 1 TL herbs of Provence
- 125 g grated Irish farmhouse cheese (or substitute with mountain cheese)
- 300 ml buttermilk
- 60 g butter (or German butter)
- 1 egg
- 1 muffin tin (12 cavities)
- 12 paper cups

Preheat the oven to 180°C. Mix wheat flour, corn flour, salt, baking powder, paprika powder and herbs of Provence in a bowl. Stir in the cheese. In another bowl whisk buttermilk, egg and butter together. Combine wet and dry ingredients.

Place paper cups into the muffin tin cavities. Fill each cup with batter. Bake muffins for about 20 minutes. When the tops are browned, perform a toothpick test; the toothpick should come out clean when the muffins are done. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to finish cooling. Optionally remove paper cups before serving and garnish with cheese and herbs.
