- 100 g sugar
- 0.5 fresh pineapple
- 1 tbsp amaretto
- juice of 1 lemon
- 40 g fresh ginger
- 200 ml coconut milk
- 100 g whipping cream
- fresh mint

Peel the pineapple, remove the core, and dice the fruit into small cubes (about 400 g of flesh). Peel and finely grate the ginger. Mix the pineapple flesh with ginger, sugar, and lemon juice; bring to a boil and let cool. Blend the cooled pineapple mixture with coconut milk and season with amaretto.

Place the pineapple mixture in a freezer for about 4 hours, stirring frequently to keep it light. Whip the cream before serving. Spoon the sorbet into glasses, top with a dollop of whipped cream, and garnish with mint leaves.
