Pineapple Carrot Salad

Ingredients

  • 4 Carrots
  • 1 tart apple
  • 0.5 Pineapple
  • 2 tbsp Apple cider vinegar
  • 2 tbsp lemon juice
  • 2 tbsp dark sesame oil
  • Salt
  • Pepper
  • 2 tbsp sesame seeds
  • 10 g basil (half bunch)

Instructions

    Peel the carrots and apple, trim the carrot ends, and remove the core of the apple. Grate the carrots and apple roughly. Peel the pineapple, cut off the stem, and dice the fruit flesh.

    Whisk together the vinegar, lemon juice, oil, salt, and pepper. Toss the prepared salad ingredients with the dressing and divide into four bowls.

    Toast the sesame seeds in a dry pan until fragrant. Wash and pat dry the basil, then tear the leaves into strips. Sprinkle both over the salad.
