Carrot and Lentil Salad in Oriental Style

Ingredients
- 3 Carrots
- 150 g yellow lentils
- 1 onion
- 1 Garlic clove
- 3 tbsp lemon juice (more to taste)
- Salt
- Pepper (freshly ground)
- a pinch cumin (finely ground)
- 4 tbsp olive oil
- 2 tbsp finely chopped mint
- mint for serving

Rinse the lentils thoroughly under running water in a sieve, then cook them in plenty of water for about 8-13 minutes until just tender. While they are cooking, peel and julienne the carrots; add them to the lentils 3-4 minutes before the cooking time ends and let them warm through.

Peel and finely dice the onion, sauté it in oil. Drain the lentils and carrots in a sieve. Whisk together lemon juice, salt, pepper, cumin, olive oil, and the sautéed onions; add mint and taste. Mix everything with the salad.

Let the salad rest for at least 30 minutes, adjust seasoning again, and serve garnished with fresh mint.
