Carrot Salad with Onion Cubes

Ingredients

  • 800 g carrots
  • Salt
  • 1 Red Onion
  • 1 sprig dill
  • 2 tbsp Apple cider vinegar
  • 1 tbsp Lemon Juice
  • 2 tbsp walnut oil
  • 2 tbsp Rapeseed oil
  • sugar
  • black pepper (freshly ground)

Instructions

    Peel and trim the carrots, then cut them into thin diagonal slices or julienne. Blanch in boiling salted water for about 1 minute, drain, and shock with ice water.

    Peel the onion and dice finely. Rinse the dill, shake dry, and chop coarsely.

    Whisk together vinegar, lemon juice, oils, diced onion, a pinch of sugar, salt, and pepper to make the dressing.

    Season to taste and toss the carrot slices in a bowl with the dressing. Let it rest for at least 30 minutes before serving.
