Pumpkin Bread

Ingredients
- 1 tbsp plant oil
- 500 g pumpkin flesh (e.g., muskmelon or muscat)
- 2 tart apples
- 2 tbsp lemon juice
- 150 g flour
- 1 tsp Baking powder
- 100 g grated cheese (e.g., Pecorino)
- 50 ml plant oil
- 2 Eggs
- 100 ml milk
- 1 tsp salt

Step 1: Preheat the oven to 180°C with top and bottom heat. Brush a baking sheet with oil.

Step 2: Roughly cut about 300 g of pumpkin flesh into pieces and spread on the sheet. Wash, peel, quarter the apples, remove cores, and cut into pieces. Add them to the sheet and drizzle with lemon juice. Bake for about 30 minutes until pumpkin and apple are soft. Then press together through a potato masher into a bowl and let cool.

Step 3: Grate the remaining pumpkin flesh finely.

Step 4: Add flour and baking powder to the bowl and sprinkle grated pumpkin over them.

Step 6-9: Whisk plant oil, eggs, milk, and salt together, pour into the mixture, and knead into a well-shaped dough. Add more milk or flour if needed.
