The alcohol‑free Piña Colada smoothie from Spoonsparrow brings a hint of the Caribbean into your glass.
Ingredients
- 20 g coconut chips (2 tbsp)
- 400 g pineapple flesh (½ pineapple)
- 2 Organic Limes
- 0.5 bulb fennel (small; 100 g)
- 200 ml coconut milk
- 300 ml coconut water
- 4 tbsp crushed ice (or ice cubes)

Roast the coconut chips in a dry pan until golden brown, then let them cool. Peel the pineapple, cut out the core and cube the flesh. Rinse one lime under hot water, dry it, and slice it thinly.

Cut the remaining lime in half and squeeze out the juice. Clean, wash, and finely chop the fennel.

Blend the pineapple with lime juice, fennel, coconut milk, and coconut water in a high‑speed blender until frothy. Pour the smoothie into four glasses, then garnish each with coconut chips and lime slices.
