Ingredients

  • 1.2 kg firm, small pears
  • 1 untreated lemon (juice)
  • 500 ml white wine
  • 2 tbsp lemon juice
  • 150 g sugar
  • 2 vanilla pods

Instructions

    Sterilize the jars. Pour 1 l water with lemon juice into a large bowl. Peel the pears, leave the stem, lightly scrape off skin, use an apple corer to remove the core from below and immediately place the pears in the lemon water.

    Poach the pears portion-wise in sugar syrup until firm, lift them out and fill the jars up to about 2 cm below the rim with the water bath. Strain the syrup, bring it to a boil again, pour over the pears until overflowing, seal immediately, briefly invert, and let cool.
