Ingredients

  • 1 kg yellow plums
  • 4 tbsp Lemon juice
  • 2 tbsp black peppercorns
  • 2 Bay leaves
  • 1 cinnamon stick
  • 500 g gelesugar (2:1)

Instructions

    Score the plums crosswise and pour boiling water over them. Remove and peel off the skin. Halve the plums, remove the pits, and combine with lemon juice, pepper, bay leaves, cinnamon, and sugar; let steep for about 4 hours.

    Boil for about 2 minutes, then remove the plums with a slotted spoon and arrange in hot rinsed jars. Cook the liquid for another ~3 minutes while stirring, then pour over the plums and seal the jars tightly.
