Ingredients
- 500 g pearl onions
- 400 ml white wine vinegar
- 20 g sea salt
- 100 g brown sugar
- 2 tsp black peppercorns
- 1 tsp cloves
- 2 dried chili peppers

Rinse the onions and blanch them in boiling salted water for 2 minutes, then drain. Bring the vinegar with salt, sugar, peppercorns, cloves, and chilies to a boil.

Fill sterilized jars with the onions, pour over the hot brine until covered, seal, and let steep for up to two weeks before serving.
