Ingredients

  • 700 g potatoes (half firm)
  • 2 Spring Onions
  • 6 EL olive oil
  • 1 TL grated lemon zest
  • 0.5 lemon (juice)
  • Salt
  • Pepper (freshly ground)
  • Nutmeg (freshly grated)
  • 1 EL parsley (finely chopped)
  • 1 Garlic clove

Instructions

    Peel, wash and cut potatoes into sticks. Heat oil in a pan and fry the potatoes over medium heat, stirring frequently.

    Clean, wash and slice spring onions thinly. Peel and finely chop garlic. Just before the end of cooking, add the spring onions, lemon zest and garlic to the potatoes and stir. Finish frying, then season with salt, pepper and nutmeg. If desired, finish with a splash of lemon juice.
