Ingredients

  • 1 stalk leeks
  • 1 Carrot
  • 1 onion
  • 3 lemons
  • 200 g honey
  • 0.5 bunch dill
  • juniper berries
  • 4 matjes fillets

Instructions

    Clean and wash the leeks and carrot, then slice them into rounds. Peel the onion and cut it into rings.

    Squeeze the lemons to extract juice and mix with honey. Wash the dill, shake dry, and finely chop. Add juniper berries and adjust sweet‑sour balance. Include the sliced vegetables and a splash of water.

    Cut the matjes into cubes and place them in the marinating mixture; refrigerate for 24 hours.
