Marinated Herring

Ingredients

  • 8 salted herrings (de-shelled)
  • 2 red onions
  • 250 g baby bell peppers (or mild chilies)
  • 3 bay leaves
  • 10 peppercorns
  • 1 tsp mustard seeds
  • 400 ml white wine or fruit vinegar
  • 2 tbsp salt

Instructions

    Soak salted herrings for at least 12 hours, then rinse thoroughly and remove any remaining scales if necessary. Trim heads, rinse the fish again, and let them drain. Peel onions and slice into rings. Wash mini peppers and drain.

    Layer herring with onion rings and peppers in a large jar, placing spices between layers. Boil vinegar with 300 ml water and salt, pour over herrings, seal tightly, and refrigerate for at least 2–3 days.
