Spicy Asian Beef Soup

Ingredients
- 800 g beef for boiling (e.g., sirloin)
- Salt
- 2 carrots
- 2 Garlic cloves
- 20 g fresh ginger (about a walnut-sized piece)
- 1 chili pepper
- 400 g pak choi (or Swiss chard as substitute)
- 3 tbsp Sesame oil
- soy sauce
- black pepper

Wash the meat and bring 1 liter of cold water to a boil. Season with salt and simmer for about 1 hour over medium heat. Peel the carrots, slice them into rounds, and add them to the broth. Remove the meat, cut it into pieces, and set aside the broth.

Meanwhile, peel and finely chop the garlic and ginger. Slice the chili lengthwise, remove the seeds, and mince it. Wash the pak choi, discard outer leaves, trim stems, and optionally cut the leaves slightly smaller.

Heat sesame oil in a pot. Sauté the garlic and ginger. Add the chili and then the pak choi, letting them wilt together. Deglaze with the broth and bring to a quick boil. Reheat the meat in the soup, season with salt, soy sauce, and pepper, and serve.
