Ingredients

  • 5 eggs
  • 120 g sugar
  • 1 tsp lemon juice
  • 75 g flour
  • 50 g ground almonds (peeled)
  • sugar for dusting
  • 200 g berry jam
  • 150 g marzipan dough
  • 320 g powdered sugar
  • 2 Tbsp grenadine
  • 1 tbsp Lemon Juice
  • pink sugar pearls

Instructions

    Preheat the oven to 200°C fan.

    Separate the eggs. Beat the yolks with half of the sugar until fluffy. Whip the whites with lemon juice until stiff, gradually adding the remaining sugar. Continue beating until glossy and peaks form. Mix flour with almonds. Fold the meringue into the yolk mixture, then add the flour-almond blend, stirring gently. Spread the batter onto a parchment-lined tray (about 30x40 cm) and bake in the preheated oven for about 15 minutes until golden brown. Transfer to a sugared kitchen towel, lift off the parchment while still on the dough, and let cool. Then cut across into three equal strips.

    Spread two of the sponge layers with jam (filtered if desired) and stack them. Finish with the third layer.

    Knead the marzipan dough with 2 tbsp powdered sugar and roll it out to about 3 mm thickness. Whisk the remaining powdered sugar with syrup and lemon juice to make a glaze. Brush the top dough layer lightly with glaze, lay the marzipan sheet on top, press gently, and cut into roughly 24 pieces with a sharp knife. Coat with the leftover glaze, let dry slightly, then dust with pink sugar pearls and allow to set.
