Petit Fours

Ingredients
- 300 g flour
- 80 g sugar
- 1 packet vanilla sugar
- 3 drops lemon flavor
- 125 g ground walnuts
- 1 egg
- 200 g butter
- 200 g whipping cream
- 50 g sugar
- 4 yolks
- 1 packet vanilla sugar
- 200 g coconut oil
- cherry brandy
- 300 g white chocolate couverture
- sugar lettering (ready-made)
- 50 marzipan paste
- Food coloring (as desired)
Instructions

Sift flour onto the work surface. Create a well in the center, add sugar, vanilla sugar, lemon flavor, walnuts and egg, and mix with part of the flour into a thick dough. Add the cold butter cut into small pieces and quickly knead all ingredients from the center into a smooth dough.

Place the dough in the refrigerator, then roll it out to a thickness of about 1 cm, cut into 12‑cm wide strips, place on a baking sheet and bake at 200 °C for 10–12 minutes. Remove the strips from the tray and let them cool.

For the filling, mix cream with sugar, yolks and vanilla sugar and heat to about 60 °C. Add the small pieces of coconut oil and stir until the fat melts. Chill in the refrigerator for about an hour.

Afterwards beat very frothy with a hand mixer and season with cherry brandy.

Brush each pastry strip with the mixture and assemble them into squares. Cut the seams into cubes.

Melt the chopped white chocolate couverture over a warm water bath, let it cool slightly. Dip the Petit Fours in the chocolate with a praliné fork and place on parchment paper not too close together.

Optionally draw fine lines with sugar lettering and create small decorations with colored marzipan paste, placing them on top.
