Ingredients

  • 250 g dark chocolate (at least 60% cocoa content)
  • 100 ml whipping cream
  • 200 g peeled ground almonds
  • 100 g sugar
  • 3 tbsp cocoa powder
  • 3 egg whites
  • cocoa powder (for dusting)
  • gold leaf (for decoration)

Instructions

    For the filling, finely chop the chocolate and melt it with the cream in a small saucepan. Set aside and refrigerate overnight.

    On the next day preheat the oven to 140°C fan. Mix the almonds with 50 g sugar and cocoa. Whisk the egg whites with the remaining sugar until very stiff, white, glossy and firm. Gently fold in the almond mixture and fill a piping bag fitted with a round tip.

    Spoon 40-50 dots onto a baking sheet lined with parchment paper, leaving some space between each.

    Bake for 10–15 minutes. Then turn off the oven and let the cookies dry for about 45 minutes. Whip the chocolate cream with an electric mixer, fill a piping bag fitted with a star tip and pipe the cream over half of the Amaretti. Assemble with the remaining half and serve chilled.
