Pesto Pasta with Broccoli

Ingredients

  • 2 cloves garlic
  • 500 g whole wheat spaghetti
  • Salt
  • 2 Handfuls Basil
  • 75 ml olive oil
  • 40 g pine nuts
  • 30 g grated Parmesan
  • 1 broccoli head
  • 2 tbsp butter
  • black pepper (freshly ground)

Instructions

    Peel and finely chop the garlic. Cook the spaghetti according to package instructions in plenty of salted water. Meanwhile, wash and dry the basil, then combine with the garlic, olive oil, pine nuts, and grated Parmesan in a blender to make pesto. Cut the broccoli into small florets and rinse them.

    Heat the butter in a large pan, add the broccoli, and pour in one ladle of pasta water. Stir for 2–3 minutes until the water has evaporated. Lift the cooked noodles from the pot and toss them with the broccoli in the pan. Season with salt and pepper.

    Remove the pan from heat and stir in the pesto. Plate the dish and, if desired, garnish with Parmesan shavings and arugula.
