Mediterranean Bulgur Salad

A Mediterranean bulgur salad from Spoonsparrow tastes especially good on warm summer days.
Ingredients
- 350 g bulgur
- 5 tomatoes
- 4 Spring Onions
- 3 tbsp basil (fine strips)
- 3 tbsp olive oil
- 3 tbsp Lemon juice
- Salt
- Pepper (freshly ground)
- lemon zest
Instructions

Stir bulgur into about 1 L of boiling, lightly salted water and let it soak for 30 minutes.

Score the tomatoes crosswise, pour boiling water over them to peel. Then halve, core, and finely chop the flesh.

Wash, trim, and slice spring onions into rings.

Combine bulgur with tomatoes, spring onions, and basil in a bowl.

Whisk together lemon juice, salt, pepper, and olive oil to make a dressing; pour over the salad, toss, and adjust seasoning.

Serve garnished with lemon zest.
