Bulgur Salad with Cumin

Spoonsparrow bulgur salad with cumin tastes great for the whole family.

Ingredients

  • 600 ml Vegetable Broth
  • 200 g bulgur
  • 1 large onion
  • 5 tomatoes
  • 2 handfuls parsley
  • 2 lemons (juice)
  • 4 tbsp olive oil
  • Salt
  • pepper (ground)
  • 1 pinch chili powder
  • 1 pinch cumin

Instructions

    Bring the vegetable broth to a boil and stir in the bulgur. Let it simmer gently for 2-5 minutes, then cover and let it rest on the turned-off stove for about 15 more minutes.

    Meanwhile peel the onion, quarter it and slice into thin strips. Wash the tomatoes and dice them small. Rinse the parsley, shake dry and finely chop the leaves.

    Whisk together lemon juice, olive oil, salt, pepper, chili powder, and cumin. Combine the bulgur with onions, tomatoes, parsley, and the dressing; season to taste. Let it rest for at least 30 minutes, re-season if needed, then serve.
