- 3 bunches basil (washed, dried)
- 4 tbsp pine nuts (fat-free toasted)
- 4 cloves garlic (peeled)
- 1 tsp sea salt (to taste)
- 80 g Parmesan (freshly grated)
- 125 ml best olive oil (cold-pressed)
- pepper (ground)
Instructions

Crush basil leaves, pine nuts and garlic in a large mortar, gradually adding salt and cheese. Finally stir in the oil spoonful by spoonful and season with pepper.

Alternatively, blend basil leaves, pine nuts, garlic and oil with an immersion blender, gradually adding salt and cheese, then season with pepper.

Store the pesto in the refrigerator and use it quickly.
