Arugula Marinade

Green arugula-based dressing for grilled dishes. The high content of glucosinolates gives the arugula a peppery and aromatic flavor.

Ingredients

  • 40 g arugula (½ bunch)
  • 2 tsp mustard seeds
  • 4 tbsp rapeseed oil
  • 4 tbsp classic vegetable broth (cold)

Instructions

    Wash the arugula, dry by spinning, remove thick stems, and finely chop.

  2. 2.

    Place mustard seeds in a mortar and crush roughly. If you don’t have a mortar, coarsely grind them in a blender or food processor.

    Add the chopped arugula and oil, then mash into a paste or blend until smooth. Stir in the vegetable broth.
