Ingredients
- 2 shallots
- 1 small green bell pepper
- 1 red bell pepper
- 250 g tomatoes
- 2 tbsp Rapeseed oil
- 0.5 tsp turmeric powder
- 1 tbsp butter (15 g)
- Salt
- Pepper
- 4 eggs
- 0.5 handful herbs (e.g., dill, parsley, chives)
Instructions

Peel and finely dice the shallots. Clean, wash, deseed both bell peppers and cut into small cubes. Wash tomatoes, quarter them and also dice finely.

Heat oil in a pan. Sauté the shallots over medium heat for 3 minutes until golden brown. Stir in turmeric and tomatoes and simmer together for 2 minutes. Add pepper cubes and cook for another 3–4 minutes. Mix in butter and season everything with salt and pepper.
