Omelette with Bacon and Herbs

Ingredients
- 6 Eggs
- 4 tbsp milk
- 100 g South Tyrolean bacon
- 1 handful mixed herbs (e.g., chervil, dill, parsley, basil)
- Salt
- freshly ground pepper
- 1 Tbsp clarified butter
- 100 g Mozzarella
- 4 ripe tomatoes
- extra-virgin olive oil

Drain the mozzarella and cut into thick slices. Dice the bacon and quickly sear in a small pan without added fat.

Whisk the eggs, stir in milk, and season with salt, pepper, and herbs. Heat clarified butter in a pan and pour in the egg mixture. Cook over gentle heat until golden brown, then flip the omelette using a large plate (place the plate on the pan, toss the omelette, and let it slide back into the pan). During cooking, top half of the omelette with mozzarella slices and sprinkle bacon cubes. Fold the omelette in half. Slide onto a preheated plate and garnish with herbs and optional extra bacon slices. Serve immediately. A simple tomato salad pairs well: slice tomatoes, season with salt, and drizzle 1–2 tbsp good olive oil.
