Omelette with Smoked Salmon

Ingredients
- 300 g cucumber
- 50 g salmon
- 3 eggs
- Salt
- pepper (ground)
- 2 tbsp mineral water
- 2 tbsp kefir (or buttermilk)
- 2 tbsp dill
- 2 tbsp chive curls
- 1 tbsp Rapeseed Oil
- 1 box garden cress

Peel the cucumber and slice it. Distribute the slices on two plates and sprinkle with salt. Cut the salmon into cubes.

Whisk the eggs with salt, pepper, mineral water, and kefir. Fold in dill and chives. Heat the oil in a non-stick pan. Pour in the egg mixture and cook over gentle heat until set. Sprinkle with salmon cubes and garden cress. Fold the smoked salmon omelette together, cut in half, and arrange on cucumber slices. Serve immediately.
