Ingredients
- 400 g rigatoni
- 1 Shallot
- 2 tbsp butter
- 5 tbsp milk
- 75 g mascarpone
- 75 g fontina
- 75 g Gorgonzola
- Salt
- Pepper (freshly ground)
- 75 g parmesan (freshly grated)
- basil (for garnish)
Instructions

Cook the pasta in plenty of salted water until al dente, then drain and set aside.

Peel and finely chop the shallot. Sauté it in butter until translucent, add milk, bring to a brief boil, then stir in mascarpone. If needed, remove rind from fontina and gorgonzola, cut into small pieces, and melt them into the sauce while stirring; season with salt and pepper.

Combine the pasta with the cheese sauce, transfer to a baking dish or heat‑proof plates, sprinkle grated parmesan on top, and bake under high heat in the oven or broil for about 5 minutes until bubbling.

Garnish with fresh basil leaves before serving.
