Penne with Tomato Sauce, Parmesan and Basil

Ingredients
- 250 g tomatoes
- 1 tbsp Tomato Paste
- 50 ml tomato juice
- 2 tbsp olive oil
- 1 Garlic clove
- 1 Shallot
- Salt
- Pepper
- a pinch sugar
- 300 g Penne
- 4 tbsp parmesan
- 1 bunch Basil
Instructions

Score the stems of the tomatoes crosswise, blanch them in boiling water, cool, peel and dice the flesh.

Peel and finely chop the shallot and garlic. Cook the pasta in plenty of salted boiling water until al dente.

Sauté onions and garlic in hot oil until translucent, add tomato paste and cook briefly, then stir in tomatoes and pour in tomato juice. Season with salt, pepper and sugar. Drain pasta and mix with the sauce. Divide into warmed bowls and sprinkle with parmesan and basil leaves.
