Pasta with Broccoli Sauce

Ingredients

  • 400 g Broccoli
  • 1 Garlic clove
  • 2 tbsp olive oil
  • Salt
  • 1 tsp lemon juice
  • Pepper (freshly ground)
  • 150 ml Vegetable broth
  • 500 g penne
  • 100 g grated Parmesan
  • 80 g Parma ham (sliced)','parsley (for garnish)

Instructions

    Wash, trim and roughly chop the broccoli. Peel and mince the garlic. Together with the broccoli sauté in hot oil in a pan for 1-2 minutes. Season with salt, lemon juice and pepper, then deglaze with broth. Cover partially and steam gently for about 5 minutes.

    Cook the pasta in salted water al dente.

    Puree the broccoli into a creamy pesto (transfer to a tall container if needed). If desired, let it reduce slightly or add more broth. Remove from heat, stir in parmesan and adjust seasoning.

    Drain the pasta and toss with the pesto. Plate on bowls, slice the ham into strips, sprinkle with parsley and serve immediately.
