Ingredients

  • 250 g firm potatoes
  • 4 Spring Onions
  • 1 red chili pepper
  • 2 handfuls mixed herbs (e.g., basil, parsley)
  • 500 g broccoli
  • 300 g orecchiette pasta
  • Salt
  • 60 ml olive oil
  • Pepper (freshly ground)

Instructions

    Cook the potatoes for about 25 minutes until tender. Drain and let cool completely.

    Wash, trim, and slice the spring onions diagonally into rings. Rinse the chili pepper (wear gloves if desired) and finely chop it. Wash the herbs, shake dry, and finely chop them.

    Wash, trim, and cut the broccoli into florets. Blanch in boiling salted water for about 8 minutes until firm. Cook the pasta in salted water as well.

    Peel the potatoes and cut into bite‑sized pieces. Heat 2 tablespoons of oil and fry the potato pieces until crisp, turning occasionally. Add the spring onions.

    Stir the remaining oil with herbs and chili.

    Drain the pasta and broccoli. Toss with herb‑chili oil and potatoes. Season with salt and pepper and serve.
