Ingredients

  • 2 Tomatoes
  • 1 red bell pepper
  • 1 small yellow zucchini
  • 1 onion
  • 2 tbsp finely chopped basil
  • 3 tbsp olive oil
  • Salt
  • ground pepper
  • 50 g black olives (pitted)
  • 400 g penne
  • grated Parmesan

Instructions

    Blanch the tomatoes for a few seconds, shock in cold water, peel, quarter, seed and cut into small pieces.

    Wash, trim, halve, deseed, remove all white membranes from the bell pepper and slice into strips.

  3. 3.

    Peel and chop the onion. Wash the zucchini, split lengthwise, pit with a spoon and cut crosswise into slices.

    Heat oil in a pan and sauté the onions until translucent, add remaining vegetables, stir-fry, season with salt and pepper, pour in 1 cup of water, cover and simmer for 5 minutes. Slice olives into rings.

    Meanwhile cook pasta in plenty of boiling salted water to al dente.

    Drain pasta and mix with vegetables, olives and basil, plate on bowls and sprinkle with parmesan before serving.
