Penne with Salmon and Watercress

Ingredients
- 400 g penne
- Salt
- 80 g watercress
- 400 g Salmon fillet
- 1 onion
- 1 Garlic clove
- 1 tbsp butter
- 150 ml dry white wine
- 150 g crème fraîche
- splash lemon juice
- Pepper
- 50 g freshly grated Parmesan
- watercress for garnish

Cook the Penne in salted water until al dente.

Rinse and pat dry the watercress, then roughly chop it.

Rinse the salmon fillet, pat dry, and cut into strips. Peel and finely dice the onion and garlic. In hot butter, sauté them until translucent. Add the watercress briefly, deglaze with wine, bring to a boil, then stir in crème fraîche. Add the salmon and simmer gently for about 5 minutes, just enough to finish cooking; do not overcook. Season with lemon juice, salt, and pepper.

Drain the pasta (add a splash of pasta water if needed), mix with half the parmesan, and divide into bowls. Garnish with remaining parmesan and watercress before serving.
