Pasta with Smoked Salmon

Ingredients
- 400 g tagliatelle
- 250 g smoked salmon
- Salt
- white pepper
- 20 g butter
- 1 lemon
- 100 ml White wine
- 2 tsp finely chopped lemon balm
- 2 lemons (juice)
- 1 tbsp flour
- 200 ml clear broth
- 60 g bell peppers
- Salt
- pepper (ground)
- 125 g whipping cream
- thyme (for garnish)
Instructions

Cook pasta in plenty of boiling salted water until al dente.

Peel the lemon with a sharp knife, removing all white membranes and filleting along the membranes. Squeeze the remaining lemon by hand to collect the juice.

Boil white wine with lemon balm for 2-3 minutes, then simmer. Whisk lemon juice with flour, stir into sauce, simmer 2-3 more minutes until thickened, add Parmesan, season with salt and pepper, then pour in cream.

Slice smoked salmon into wide strips, season with collected lemon juice, salt, and pepper, quickly sauté in hot butter. Finally add the lemon fillets.

Drain pasta and plate with lemon sauce and salmon strips. Sprinkle thyme and serve immediately.
